Holi special Thandai recipes

Ingredients: – 1 cup almonds, soaked overnight – 1/2 cup cashews, soaked overnight – 1/4 cup pistachios, soaked overnight – 1/4 cup poppy seeds, soaked overnight – 1/4 cup melon seeds, soaked overnight

Ingredients: – 1 tbsp fennel seeds – 1 tbsp black peppercorns – 1 tbsp cardamom pods, peeled – 1 tbsp rose petals – 1/4 tsp saffron strands – 1/2 cup sugar – 1/2 tsp ground nutmeg – 4 cups milk

1. Drain the soaked almonds, cashews, pistachios, poppy seeds, and melon seeds, and grind them to a fine paste in a blender or food processor.

2. Grind the fennel seeds, black peppercorns, cardamom pods, rose petals, and saffron strands to a fine powder.

3. In a large bowl, mix the nut paste, spice powder, sugar, and ground nutmeg together.

4. Slowly add the milk to the mixture, stirring constantly until well combined.

5. Strain the thandai through a fine-mesh strainer to remove any large particles or solids.

6. Chill the thandai in the refrigerator for at least an hour before serving.
